Cod and potato meat sauce gratin

    The meat sauce spread over pasta can also be used as a gratin sauce. This is a combination of the mild flavor of cod, the soft texture of potatoes, and a rich sauce. It is an easy-to-make gratin that goes well with rice or bread.

  • To make the cod easier to eat, remove any bones. Wipe off the moisture on the surface to remove the odor.
  • Sprinkle some white wine on the cod before steaming it to further eliminate any unpleasant odor. You can also use cooking sake or water instead.
  • Cod is rich in protein but low in fat, so it pairs well with fatty foods such as cheese. If you use salted cod, adjust the seasoning to taste by using less salt.
  • We recommend soft, fluffy varieties of potatoes such as Danshaku or Kitaakari.

Ingredients (for 2 people)

unsalted cod fillets 2(120g)

medium potatoes 2(300g)
olive oil 1/2 tablespoon
white wine 1 tablespoon

Cooking

  • Sprinkle a little salt (not included in the recipe) on the cod and let it sit for about 10 minutes (not necessary if using salted cod). Wipe off any moisture on the surface with kitchen paper and cut each piece into 4 equal parts.
  • Cut the onion in half and then slice thinly. Chop the garlic finely.
  • Peel the potatoes, cut them into 2cm thick slices and place in a heat-resistant container. Cover with plastic wrap and microwave at 600W for about 6 minutes, until a bamboo skewer can be inserted easily. Mash roughly with a fork.
  • Add olive oil to a frying pan and heat over medium heat. Add step 2 and fry until the onions are translucent.
  • Add step 1 to step 4, pour the white wine over the cod, cover and cook until the surface turns white.
  • Add step 3 to step 5, mix well and adjust seasoning with a).
  • Place step 6 in 2 equal portions into a heat-resistant container and spread half of the meat sauce on top. Sprinkle pizza cheese on top and bake in a toaster oven for 10 minutes. If you use an oven, preheat the oven to 200°C and bake for 15 minutes. Finish by sprinkling chopped parsley.
