    Pork, chives, and eggs are a great combination to boost stamina and recover from fatigue. The sauce goes well with both chilled and/or freshly boiled udon noodles.

    Enjoy it with plenty of sesame-flavored dipping sauce.

  • Chives, which are in season, are characterized by their good fragrance and softness.
  • Don’t add the chives all at once. Add the tips of the leaves after the eggs are combined to prevent overheating and enjoy the aroma even more.
  • We also recommend thin udon noodles and cold barley noodles, as the flavors are easily entwined.

Ingredients (for 4 people)

Udon 400g
Pork (thin sliced for shabu-shabu use) 200g
Chives 1/2 bunch
Green onion 1 stalk
a)Bonito soy sauce

Cooking

  • Cut the pork in half and the chives into 3 cm wide pieces. Slice the green onion diagonally into 1 cm wide pieces, and beat the egg.
  • Put a) in a pot and put it on high heat. When it boils, turn the heat down to medium, add the pork, and mix with chopsticks to prevent sticking.
  • Add the green onion and 3/4 of the chives to 2. and bring to a boil. Increase the heat, pour in the eggs, mix lightly and stir, add the remaining chives, sprinkle with sesame oil, and turn off the heat.
  • Boil plenty of water in another pot, and when it boils, add the udon. Mix and loosen with chopsticks and boil for the specified time, transfer to a colander and drain. If you want to eat it cold, wash it under running water to remove the slime, and rinse with cold water.
  • Pour the warmed 3. into a bowl and sprinkle with sesame seeds. Place the drained udon on a plate and add to the dipping sauce.
