    This is a delicious summer sukiyaki dish with softly simmered eggplant and bell peppers. Adding plenty of perilla leaves (shiso) gives it a fragrant and refreshing taste, and you’ll find yourself eating extra. All you have to do is quickly boil the beef, remove it, and then simmer the vegetables in the broth that has absorbed the meat’s flavor, making this a time-saving dish that’s perfect for the hot summer.

  • Beef becomes tough if it is overcooked, so it is first quickly cooked in strong seasonings, allowing the umami flavor of the beef to be extracted into the broth. At this point, it’s OK if there are some red areas remaining.
  • If you’ve lost your appetite and want a lighter flavor, we recommend using ground beef for its nutritional value.

Eggplants 2(180g)
Bell peppers 2(50g)

  Sugar

Water 100ml
Perilla leaves (sliced into strips) 6

Cooking

  • Cut off the stem of the eggplant, cut it in half lengthwise, make a diagonal cut into the skin side, then cut it in half horizontally. Cut the peppers in half lengthwise and remove the seeds.
  • Add (a) and half the amount of water to a frying pan and heat over medium heat until boiling. Spread the beef slices one by one and place them in the pot, cook them quickly, then remove them from the pot.
  • Add the remaining water and step 1 to step 2, cover and bring to a boil then reduce heat to low and simmer for about 10 minutes, turning several times during the simmering process.
  • Return the beef to step 3 and turn off the heat when it is warm. Place in a serving bowl and top with shiso leaves.
