  • Sushiage (square) fried tofu used to prepare inarizushi is recommended because it is thin, does not tear easily, and is easy to handle. Cut the rectangular abura-age in half before using.

Cooking

  • Make a slit on one side of the sushiage with kitchen scissors, and open it slowly to form a bag.
  • Chop the cabbage, chives, and green onions.
